Stir-Fried Broccoli with Chicken Breast

Stir-fried broccoli with chicken breast is a classic light and healthy Chinese home-cooked dish.

Tender chicken breast matches crisp broccoli, with a fresh and savory taste.

It is low in fat, high in protein and rich in vitamins, ideal for daily meals and fitness diets.

Ingredients

Main Ingredients

250g chicken breast
300g fresh broccoli

Aromatics

3 garlic cloves (minced)
2 thin ginger slices

Chicken Marinade

1 tsp cooking wine
1 tsp light soy sauce
A pinch of salt
A little ground white pepper
1 tsp cornstarch
1 tsp cooking oil

Seasonings for Stir-frying

1 tbsp light soy sauce
½ tsp oyster sauce
A pinch of salt
½ tsp white sugar
Ground black pepper (optional)
Cooking oil
A little water starch (for thickening, optional)

Step-by-Step Instructions

  1. Process and marinate chicken breast
Cut chicken breast into thin slices or small dices. Rinse and drain well.
Add cooking wine, light soy sauce, salt, white pepper and cornstarch. Stir evenly, then add a spoonful of cooking oil and mix again. Let it marinate for 15 minutes to lock moisture and keep tenderness.
  2. Prepare broccoli
Cut broccoli into small florets. Rinse thoroughly to remove dirt and residual pests.
Boil water in a pot, add a little salt and oil. Put broccoli in and blanch for 1 minute. Take out and drain immediately to retain bright green color and crisp texture.
  3. Stir-fry the chicken
Heat cooking oil in a wok over medium heat. Add the marinated chicken and stir-fry quickly until it turns white and fully cooked. Scoop out and set aside.
  4. Sauté aromatics and broccoli
Leave a little base oil in the wok. Add minced garlic and ginger slices, stir-fry until fragrant.
Add blanched broccoli, stir-fry over high heat for 1 minute.
  5. Combine and season
Put the fried chicken back into the wok. Add light soy sauce, oyster sauce, sugar and a pinch of salt. Sprinkle black pepper if you like.
Stir all ingredients evenly. Drizzle water starch to slightly thicken the sauce if preferred.
  6. Serve
Stir for another 30 seconds, then turn off the heat. Transfer to a plate and serve hot.

Cooking Tips

  1. Marinating chicken with cornstarch and oil prevents it from getting dry and tough after stir-frying.
  2. Short blanching time is essential to keep broccoli crisp and nutritious.
  3. Use high heat for quick stir-frying to preserve the fresh taste of ingredients.
  4. Control the amount of seasoning to keep the dish light and refreshing.
