Garlic Spicy Oyster Sauce Zucchini with Pork

 This home-style dish features tender pork slices paired with crisp zucchini, coated in rich garlic spicy oyster sauce.



 It is savory, slightly spicy and full of garlic aroma, delicious and great with rice.

Ingredients

Main Ingredients

280g zucchini
150g lean pork

Aromatics

4 garlic cloves
1 small ginger piece
2 dried chili peppers
2 scallions

Seasonings

1 tbsp oyster sauce
1 tsp light soy sauce
Half tsp dark soy sauce
A pinch of salt
Little white sugar
Cooking wine
Cooking oil
White pepper powder

Step-by-Step Instructions

  1. Prepare ingredients
    Wash zucchini and cut into even thin slices. Slice lean pork thinly.
    Mince garlic and ginger, cut scallions into sections and break dried chilies apart.
  2. Marinate pork
    Put pork slices in a bowl, add a little cooking wine, white pepper and a pinch of salt. Stir well and marinate for 10 minutes.
  3. Stir-fry pork
    Heat oil in a wok over medium heat. Add marinated pork and stir-fry quickly until it turns pale and fully cooked, then scoop out and reserve.
  4. Sauté fragrant base
    Leave base oil in the pan, add ginger, garlic and dried chilies. Stir-fry on low heat until strong fragrance comes out.
  5. Cook zucchini
    Add zucchini slices and stir-fry evenly for 2 minutes until it becomes slightly soft and tender.
  6. Mix and season
    Put the fried pork back into the wok. Add oyster sauce, light soy sauce, dark soy sauce and a little sugar.
    Stir all ingredients thoroughly to make the sauce wrap every slice evenly.
  7. Final adjustment
    Taste and add proper salt as needed. Stir briefly, scatter scallion sections and turn off heat.
    Serve hot on a plate.
