  • Sesame paste — 100–150 g (thinned with water or sesame oil to pourable consistency)
  • Garlic — 4–6 cloves, minced or pounded into garlic water (add a little salt and cold water)
  • Chinkiang black vinegar (or rice vinegar) — 3–4 Tbsp
  • Light soy sauce — 2–3 Tbsp
  • Chili oil or spicy sauce — 1–2 Tbsp (or to taste)
  • Mustard paste/horseradish — 1–2 tsp (for pungent kick; optional but traditional)
  • Pickled carrot or radish ( or similar) — a handful, shredded
  • Fresh cucumber or carrot — shredded (modern variation)
  • Chopped cilantro or green onion — for garnish
  • Salt and sugar — to taste (small amounts to balance)
Preparation Steps
  1. Make the buckwheat dough
    In a large bowl, mix buckwheat flour with salt (if using).
    Gradually pour in boiling or very hot water while stirring vigorously with chopsticks or a wooden spoon (this scalding technique gelatinizes the starch for the signature chewy texture).
    Stir until there are no dry flour pockets and it forms a soft, slightly sticky dough (consistency like thick mashed potato). If too dry, add a little more hot water; if too wet, add a touch more flour.
    Some recipes add a small amount of potato starch for smoother, more elastic results.
  2. Shape and steam the cake
    Lightly oil a plate, bowl, or shallow dish (traditional method uses small bowls for individual portions).
    Wet your hands with cold water (to prevent sticking) and press the hot dough firmly into the dish, smoothing the top evenly (about 1–2 cm / ½–¾ inch thick).
    Place in a steamer. Steam over medium-high heat for 15–25 minutes (depending on thickness) until fully set and translucent-looking.
    Remove and let cool completely at room temperature, then refrigerate for at least 2 hours (or overnight) until firm and easy to slice. Chilling improves the chewy texture.
  3. Prepare the toppings
    Thin the sesame paste with a little cold water or sesame oil until smooth and pourable (like heavy cream).
    Make garlic water: mince garlic, mix with a pinch of salt and a few tablespoons of cold water.
    Prepare shredded pickled carrot/radish and fresh vegetables. Have chili oil, vinegar, soy sauce, and mustard ready.
  4. Slice and assemble
    Once the cake is fully chilled and firm, unmold it.
    Traditional way: Use a special scraper or knife to shave/scrape the cake into thin, irregular strips or diamond-shaped pieces (two thin ends with thicker middle).
    Modern/simple way: Cut into thin slices or strips.
    Place the strips in a bowl or on a plate.
  5. Serve
    Generously drizzle with thinned sesame paste, garlic water, vinegar, soy sauce, chili oil, and a touch of mustard.
    Top with pickled carrot shreds, fresh cucumber/carrot, and chopped cilantro/green onion.
    Mix everything thoroughly just before eating so every piece is coated in the flavorful sauce.
    Serve cold or at room temperature—refreshing and addictive!

  • Texture — The scalding with hot water + steaming + thorough chilling creates the signature bouncy, chewy mouthfeel. Do not skip chilling.
