Chinese-Style Baked Banana Egg Custard is a simple, healthy, and naturally sweet dessert made with ripe bananas, eggs, and milk

Cooked in an air fryer, this dish is quick, oil-free, and perfect for breakfast, afternoon tea, or a light dessert. 

The texture is soft and creamy, with a gentle banana aroma.


Ingredients

  • 2 ripe bananas

  • 2 eggs

  • 120 ml milk (whole milk or low-fat)

  • 1 tablespoon sugar or honey (optional, adjust to taste)

  • ½ teaspoon vanilla extract (optional)

  • A pinch of salt

  • A few drops of lemon juice (optional, prevents oxidation)


Preparation

  1. Prepare the Bananas
    Peel the bananas and mash them thoroughly in a bowl until smooth.
    Add a few drops of lemon juice if desired.

  2. Mix the Egg Custard
    Crack the eggs into the banana mixture. Add milk, sugar or honey, vanilla extract, and a pinch of salt.
    Whisk gently until well combined and smooth.

  3. Strain (Optional but Recommended)
    For a smoother texture, strain the mixture through a fine sieve to remove bubbles and egg strands.

  4. Pour into Baking Dish
    Pour the mixture into a heat-resistant bowl or small ramekins suitable for an air fryer.
    Tap gently to release air bubbles.


Air Fryer Instructions

  1. Preheat the Air Fryer
    Preheat to 170°C (340°F) for 3–5 minutes.

  2. Bake the Custard
    Place the dish into the air fryer basket.
    Bake at 170°C (340°F) for 12–15 minutes, until the custard is set but still slightly jiggly in the center.

  3. Cool Slightly
    Remove and let cool for 5 minutes before serving. The custard will firm up as it cools.
